I haven't posted in this thing since January. Guess I'll kick another session of activity off with a recipe.
Here's some pecan pie that we've been making forever. It's super good and if you're allergic to nuts, I don't think I would eat it!
Ingredients
2 tablespoons butter. You're gonna need to melt it.
1 Deep dish pie crust, it can be frozen or unbaked. I would recommend a 9 inch.
1 cup of dark corn syrup.
1 cup of sugar
1 teaspoon Pure Vanilla Extract
3 eggs
1-1/2 cups pecans
Directions
Preheat oven to 350°F.
Mix eggs, corn syrup, butter, sugar, and vanilla all together. I would use a fork to make sure it all gets mixed fairly well. Also, stir in the pecans then pour the concoction into the pie crust.
Just bake it on the center rack of the oven for about 55 to 70 minutes. Cool for two hours to three hours. For the frozen crust, I usually just fill it with the filling and bake it on a cookie sheet already preheated.
If you have a temperature thing, my family usually knows it's done with the center at around 200 to 210 degrees F. Otherwise if you touch the center lightly and it forms back quickly, kind of like rubber I guess, then it's done.
