Could one stave off the effects of the poison for a few more minutes than what the price list said(which was 1 minute)

I would say that through a lot of effort you can attempt to, but I dont think you would last much longer than a minute (unless you are using some method to slow the rate of the poison circulating through your body). There is no harm in trying and if RPed convincingly it could provide a lot of conflict after the initial poisoning.

I was hoping to make Garland last a few minutes before being knocked out.

Have you looked at Blue Whinnis? Maybe that is the effect you want.

They work as well, but it doesn't say how long until the target gets knocked out
