Herbs and Spices 101
(Basil, Cinnamon, Parsley, Pepper, Sage, Salt, Sugar, Thyme)
Spring 4th 513 AV, 14th Bell
"See these right here? All of this is seasoning, it helps add more flavor to the food." Lounel pointed at the small cluster on his counter with a hand on Artur's shoulder, the bear's nose already picked up faint traces of the aroma the spices and seasoning gave off. He recognized pepper right away of course, and he could see a small amount of salt as well. The rest were a mystery waiting to be unvovered, and Lounel would be giving him his first lesson in spices. "Always remember that spices consist of seeds, buds, fruits, certain parts of flowers, roots, and sometimes bark too. Herbs are usually aromatic leaves you can find."
"Seeds, buds, fruits, flower parts, roots, and bark are spices, herbs are aromatic leaves." He repeated as if he were writing a mental note, Lounel nodded with a grin as he continued.
"Now the first spice I'm teaching you about," He picked up a brown stick and held it before Artur, "is Cinnamon. This can be used with fruits, desserts, breads, pork, even chicken and beef. Oh and yellow vegetables as well." He explained as Artur sniffed the cinnamon stick curiously, a sweet sensation filled his nose that gave the impression cinnamon was a spice. "Some spices and herbs can be grinded into powder, which can be spreaded into whatever dish your cooking." He added as he placed the cinnamon stick down, then pointed to a greyish powder next to the stick. "Cinnamon being one of the spices that be ground, this powder is an herb called Sage. Since its a powdery substance people usually refer to it as "Ground Sage", same principle applies for the Cinnamon."
'Ground is the term for powdered herbs and spices then.' He repeated in his mind with an intrigued look at the powder. "Now Sage is used for stuffs really, pork and poultry too. Try it when you cook rice too." Artur dipped his finger in the sage to get a sample, when he first sniffed it a strong aroma wafted into his nostrils. Yet the aroma wasn't so strong when he tried it, the taste only present on his tongue for a rather short half of a chime.
"Interesting." He mused with interest, and Lounel only chuckled before moving on.
"This here," he pointed to a green three leafed herb, "this is an herb called parsley." He allowed Artur to get a smell of it before he continued, and a mild yet splendorous aroma filled his nostrils, "Great for soups and stews, absolutey great for them. Also meat, poultry, and even fish, since you like fish so much. Its good with many vegetables too, and even when you make eggs." Artur's eyebrow rose, this herb would no doubt be his next best friend in the kitchen. When Lounel taught him how to make eggs, the bear had been in love with them ever since. Now he knew of an herb to add a little flavor in them, best of all any fish he decided to cook instead of eating raw. Lounel placed the parsley back down and picked up another herb, this herb being just a single small crinkled leaf. "This is Basil," He said as Artur took and sniffed it, "Basil leaves go good with cheese, vegetables, tomatoes, poultry, and some meats as e
well. You should try it with rabbit." Artur nodded as he placed the leaves back down, the sweet and mild flavor of the aroma stored away in his memory.
"Next is Thyme, which you'll find quite aromatic." He held a leafy stalk out and Artur took a good whiff, his nose filled with the aroma Lounel mentioned. It had a pungent smell to it that piqued his curiosity, as Lounel placed it back on the counter with the rest. "Thyme is another good soup and stew herb, stuffings, rice, rabbit, lamb, fish, and poultry too."
"Like Sage and Parsley!" He pointed out with enthusiasm.
"Yes," Lounel laughed a bit, "Like Sage and Parsley." He pointed to the black powder next, and Artur needn't an explaination for this.
"That's pepper! Gives a small kick to food, and salt which brings out more flavor!" He cheered as he pointed at the pile of white grainy powder.
"Very good! You should know those two pretty well by now." He remarked with a grin, a finger pointed to another white grain near the salt. "But what is this?" Artur looked at it and grabbed a pinch, no real smell could be traced off of the grainy substance. When he sampled it a real sweet sensation covered his tongue, a sensation he wanted absolutely more of. He could only shrug his shoulders for an answer, as he wasn't aware of what herb or spice this could be. "It's sugar, a sweetener that is used mostly for desserts. It makes hot tea sweeter too when you mix it in, which tea can be bitter depending on how little sugar is used."
"Sugar huh? Neat! You sure know a lot Lou! Artur remarked with a wide grin, Lounel chuckled when he heard this.
"Psh, only enough to make good food is all. Now lets go over this again, I wanna see how much stuck in that empty head of yours." He teased as he stepped aside. Artur would take front and center and look at the herbs and spices before him, and after a good amount of time he would finally recall each specific herb or spice. He remembered each and every one specifically by scent, as their look just wasn't enough to go by, and even though their names were difficult to remember first hand, he learned and remembered them all before the beginning of their work.
